Most PCB signal conditioners include an ICP check function.  The display will have 3 coloured lights or a meter with 3 coloured regions.  Red shows there is a short circuit in either the cable or the sensor, yellow shows there is an open circuit in the cable or the sensor, and green shows that ICP circuit has powered up correctly.

An additional check can me made with either the 394C06 or 699A02 handheld calibrators.  These allow you to excite the accelerometer with a known vibration level to check the whole measurement chain.
